The first Happy Chef opened in Mankato in 1963. The chain grew to 65 restaurants across the Midwest, employing 3,000 people nearly. As consumers increasingly patronized competitors and tastes changed  to favor restaurants that offered televisions and alcohol, their owner leased or sold all the restaurants but one.
